The powder of green tea can only be called green tea powder. The real matcha powder is ground through a rigorous process. Its nutritional value far exceeds that of green tea, and the price is at least 30 times that of green tea powder. So what's the difference between the two, let's take a closer look.
1. Different tree species
The tea trees that produce matcha are selected, and we generally use the three tea tree species Shubei, Chaori, and Chaoyang. It was introduced from Japan and is characterized by the fresh and tender tea leaves grown and the better taste of matcha made.

2. Different craftsmanship
There are more than a dozen steps in the production of matcha, which are very complicated, including crushing, steam fixing, cooling, drying, separation of stems and leaves, removal of sand and gravel, sterilization, rapid drying, and grinding. After this set of processes, ordinary tea leaves can be turned into a fine powder of more than 2500 mesh.

3. Different picking time
Matcha is picked later than green tea, which is to prolong the growth period of tea leaves and reduces the bitter tea polyphenols in tea leaves. During the growing process, the green tea used to make matcha requires a shed and a black net to filter the ultraviolet rays from the sun. Due to the high chlorophyll content, the color of the finished matcha is generally emerald green, and the ordinary brewed green tea is yellowish.

4. Different smells and tastes
Because the green tea used in matcha has a long growth cycle, it is rich in more amino acids and smells like seaweed, while green tea powder smells like a normal tea. Matcha powder can be directly mixed with water. Try mixing matcha powder and green tea powder with water and shaking them well. The result: green tea powder mixed with water tastes very bitter, just like the taste of tea leaves chewed in the mouth, while matcha powder mixed with water is very bitter. The water tastes very fresh (rich in amino acids) and has almost no bitter taste.
